Breakfast Bruschetta


4 slices of multi-grain bread
2 ripe tomatoes, sliced
Salt and black pepper
4 fresh basil leaves
1 sweet onion (Vidalia or Maui), thinly sliced (optional)


Preparation:

Toast or grill bread until lightly browned.
Top with tomato slices, salt and pepper to taste, and fresh basil leaves.
You can also use thinly sliced onion on top of the tomatoes
if the taste is not too strong for your palette in the morning.
