Huevos Rancheros
1 Tbsp. Ollive Oil
2 onions, thinly sliced
1 4ounce can Ortega© diced chilies
1 tomato, seeded and diced
2 Tbsp (1/4 stick) butter
4 large eggs
2 ounces sharp Cheddar cheese, grated
Salsa
Preparation:
Heat a skillet over high heat. Add olive oil and onions.
Saute the onions
until brown and crispy, about 15 minutes.
Drain the chilies and add to the
onions.
Add tomato and stir until heated through.
Divide onto 2 plates.
Add
butter to skillet and melt.
Crack the eggs into skillet and fry. Cover with
a lid for 2 minutes to cook the whites.
If you prefer the yolks cooked, keep
the heat on a little longer.
Repeat with the remining 2 eggs.
Place 2 fried
eggs on each place on top of the onions.
Top with the greated Cheddar cheese,
salsa, sour cream and green onions.
