Baked Fish
Ingredients:
1 whole snapper or other large fish suitable for baking,
with head and tail
1/2 cup white wine
11 cup olive oil
2 - 3 cloves garlic, chopped finely
salt
pepper
breadcrumbs
3 - 4 tbsp chopped parsley
potatoes, peeled and cut into baking size
DIRECTIONS
Wash the fish, season with a little salt, and drain. Combine the wine, oil, garlic and salt and pepper in a baking dish. Dip the fish in this mixture then coat with breadcrumbs and chopped parsley. Return to baking dish, arrange the potatoes around it and bake in a moderate oven until crisp and tender, basting frequently, turning once very carefully so as not to damage the fish.
