Corn Chowder

Ingredients:

4 oz. bacon - diced (about 4 slices)
1 large onion - chopped
1 large green pepper - chopped and blanched
2 medium potatoes - diced
1 Bay leaf
1 stick celery - chopped
15 oz. water
Salt & pepper
1 1/4 oz. flour (1/3 cup)
20 oz Milk
2 cups sweet corn kernels
chopped parsley


Preparation:

Lightly brown bacon. Then add celery and onion. Saute for 3 minutes. Then add pepper, potatoes, bay leaf and water.

Bring to a boil, add (black) pepper and salt. Simmer until potatoes are tender.
Then strain potatoes sou can thicken with milk and flour.
Blend flour with 1/2 cup of milk and add to chowder.
Stir until it boils. turn down heat.
Heat the rest of the milk and add a little at a time.
Add corn. Simmer for a few minutes.
Scatter parsley on top for garnish.
